04.04.21: Nopales

Along with rabbit and eggs, nopales (the new growth of prickly pear cactus) are a great Easter food; in prepping mine yesterday, I definitely pierced my hands a few times…

I’m in the throes of a love affair with this food: they’re an abundant wild food source at this season and in this region; they add green to a diet that, on the road, I fight to keep colorful; their preparation necessitates slowing, concentration, intentionality–they’re the antithesis of fast food 🙂
